Healthy Coconut Macaroons

Another healthy eating recipe is on its way, strictly from the Paleo diet.

The Paleo diet is a healthy eating method that is based on lean proteins,

fruit and vegetables, and healthy fats from nuts and seeds. The benefits are said to include weight loss, improved blood lipids, and increased strength. In this recipe, we substitute ghee (which can be purchased at trader joes) for regular butter. 

 

Ingredients for Healthy Macaroons:

2 egg whites

¼ cup honey

1 tsp vanilla extract

Lemon vest (1 whole lemon)

Pinch of salt

1 ½ cups grated coconut

2 tbsp ghee (melted)

Mix together all of the ingredients besides coconut flakes and ghee.

Whisk until frothy, and then add the remaining two. Let the batter rest for 20 minutes.

Afterward, spoon tablespoons of the mixture onto a lined baking sheet and insert them into the preheated (350 degrees) oven.

Coconut Macaroons Paleo

After 8-12 minutes, make sure the macaroons are golden. Take them out to let them cool, and here’s the part we (or at least, me!) have been waiting for… dip the bottom of the macaroons in melted dark chocolate and sprinkle with chopped pistachios.

Mmm, it’s like a healthy and way, way, WAY flavorful Almond Joy!
